Sweet Potato Soufflé
Preheat oven 375°
6 – Sweet potatoes
1\2 Teaspoon salt
2 – Tablespoons butter
1 – egg, beaten
½ cup of dried cranberries (soak them in water or your favorite alcohol for 30 min) or raisins.
3 Tablespoons grated orange rind
¼ cup whipping cream or half & half
pinch of nutmeg
1 cup of mini marshmallows
Boil potatoes, with skins on, until tender approx. 30 min.
Peel and mash.
Add remaining ingredients. EXCEPT MINI MARSHMALLOWS
Whip until light.
Place in a high rimmed baking dish. Top with marshmallows.
Bake in 375° for 10 minutes.
